How do I approach these shots mentally?

The players who get it done in the wind are the ones who don't try to fight it. They don't swing harder or moan about bad luck.  They focus on hitting the ball solidly.  A well struck golf ball will maximize the ball speed and hold it’s line as it cuts through the wind.

  If you make off-center contact on the club face, you will lose ball speed and the wind will definitely eat that one up.  Let's focus on playing into the wind, because that's the shot that gets most golfers to increase that grip pressure and swing too hard.  Playing a shot into the wind adds more back spin.  Swinging harder also adds more backspin.  Resist the urge to KILL it!
